AMSTERDAM

How a Saturday tradition from Champagne ended up on a street in Amsterdam.

We were both born in Reims. We have known each other for seventeen years, same school, same neighborhoods, same obsession with food. When we moved to Amsterdam, we decided to start our first business around something we knew by heart: pâté en croûte.

Back home in Reims, it's an institution. We ate it on Saturdays after the market, at a long table, with family or friends. We also ate it on Sunday nights with a green salad. Our grandparents baked it for the Sunday lunch. That's how we grew up eating it.

It's an old recipe from Champagne, and we kept the original, veal and pork, slow-marinated for 24 hours, while inventing our own variations alongside.

The perfect pairing is always the same: a chilled glass of Champagne. Slow afternoon, good company, no rush.
