From Reims to Amsterdam

Maison Champenoise was founded by Lema and Thomas, two childhood friends born and raised in Reims, in the heart of the Champagne region, whose friendship spans more than 15 years.

Driven by a shared passion for food, hospitality, and craftsmanship, their paths first evolved separately. Thomas built his experience as an entrepreneur in the sports and events industry in Paris, while Lema developed over seven years of experience in hospitality, working closely with guests and service.

Both passionate cooks and avid travelers, they eventually decided to bring their vision together. It was in Amsterdam that they chose to introduce the pâté croûte, a French classic they felt resonated naturally with the city’s food culture, much like the beloved sausage broodje, familiar, comforting, and meant to be shared.
